Hello friends, it’s been a bit hasn’t it? As much as I love living in “real life” I certainly miss sharing fun in this space too. Between the kids finishing off their quarantine school year, to us escaping to one of our favorite beach towns… a fun post like this seems long overdue. And I’m excited because this one comes straight from the kitchen aka my therapy spot! Through the craziness of 2020 have you figured out your therapy yet?! I hope this post gives you the nudge to figure that out!
Let’s get on with this post: homemade almond milk… but better. CREAMY, dare I say THE CREAMIEST almond milk ever! Did I mention homemade? Homemade almond milk seems like an overkill… until you freaking TRY it 🙌. Truly life-changing. Not only is it crazy easy (three ingredients total) but this recipe also skimps on all that extra junk and preservatives the store bought variations have. Guar gum never really sounded appetizing to me 🤢. PLUS this recipe can be interchanged between practically any nut you can think of: cashews, hazelnuts, walnuts and more.
Almond Milk Anatomy
After many trials with nut milks from the store and my kitchen, I really started paying attention to what separates good almond milk from AMAZING “out of this world” almond milk… An amazing almond milk is:
Creamy, smooth, and enhanced with just a touch of sweetness.
My almond milk recipe uses a higher almond to water ratio for the creamiest and smoothest texture. A pinch of salt and some dates give it the freshest, most crave-worthy experience while keeping the milk a clean source of Vitamin E and calcium without the dairy! Perfect for a bowl of cereal, baking recipes, pancakes, waffles, smoothies, protein shakes, popsicles and my personal favorite… coffee creamer. It’s amazing what just three simple ingredients can make right? Whether you have a dairy intolerance or not, this almond milk recipe is sure to be the one that you keep coming back to time and time again.
Not even joking guys, my husband who shot these photos of me immediately wanted this cereal bowl 🤣. He is the meat, butter, whole milk lover and he was honestly so surprised it tasted CRAZY incredible. I had to pry him away from the rest of the jar because he kept filling the bowl with more cereal and almond milk to which the cute banter almost turned ugly because ain’t nobody taking my glorious almond milk… it ALMOST got ugly but we live to see another day of married life LOL.

One More Thing
Before I share my recipe, the two most important items you will need (aside from the ingredients) are a blender and a nut milk bag. Sounds kind of silly, we still laugh about it 😂 but a nut milk bag is a game changer for almond milk and more! I even use mine to make large servings of cold brew tea and coffee, juices and so on. Here is the big nut milk bag I bought from amazon! I highly recommend this one because it is large, great quality and even comes with a recipe book!
Recipe:
Here is the recipe for the creamiest homemade almond milk!! Feel free to use my free printable below too 👌.
You Will Need:
1 1/3 cup almonds plain unsalted
1/4 teaspoon salt
2 dates pitted
4 cups filtered cold water
*nut milk bag and blender*
Step 1:
The night before place almonds in a large bowl and cover with water. Let soak for 10 to 12 hours then drain and rinse with cold water.
Step 2:
Place almonds, filtered water, dates, and salt in blender and blend for two minutes or until completely smooth.
Step 3:
Pour prepared almond milk into lidded jar and seal the refrigerate to enjoy! Almond milk will stay fresh for 3 to 5 days in fridge. Some settling may occur, simply shake jar before use!
Tips + Suggestions
Meal prep this almond milk on the weekend so it is ready to go for the week! Label the jar with a date to replace simply with tape and a sharpie. If you forget, no worries just remember to replace the milk weekly.
Plan accordingly, the almonds must sit in the water to soften. The process works best overnight for easy preparation in the morning.
Feel free to customize this milk with fun flavors like cacao powder, vanilla, cinnamon, maple syrup, coconut milk and more. I will take a serving of milk and add to a separate small jar with full fat coconut milk and some vanilla extract for a clean, delicious plant based coffee creamer! So good.
Tall lidded mason jars work best for storage. I use them for on the go salads, homemade lemonade, soups, and more. Here they are below.
I’m also sharing my baby aka the Vitamix! The blender was an overall investment in our health and I can attest that it is worth the splurge. Example, we made smoothie pops with the almond milk I made by blending crushed pineapple, almond milk, coconut milk and honey. I use it every morning for fresh juices too. I’ll share how I do that soon 😉.

Ingredients
- 1 1/3 cup almonds whole unsalted

- 1/4 tsp salt
