RECIPE UPDATE: Below is the original post! Yesterday my son and I revamped this recipe with 2 simple tweaks. The recipe card at the bottom of this post includes the new and improved version with less sugar and double the chocolate (this is optional!). If you haven’t tried these yet, now is the perfect time. The changes: Less coconut sugar and a swap of chocolate protein powder for vanilla protein powder for chocolate lovers 😍. Below is my favorite protein powder in both flavors! The taste is smooth and light, never chalky and just perfect for baking with.

Hey guys! It’s been a little minute since my last recipe here. If I’m being honest, my brain needed that break. Mommin’ is so hard and with summer drawing near I’ve been trying to get some relax time in before my days are completely taken up by toddler moods and summer things. Don’t get me wrong, I love having my kiddos home with me… but it gets HARD. Please tell me you understand…
And speaking of summer, I’m also tightening up my diet just a tad. It sounds intense, but in my world that just means making things that I love to eat and taking them to the next level for the matter of fitness. Take for example today’s recipe: Perfect Protein Cookies ! Yes I said PERFECT and I mean it!! They are also Paleo, what’s not to love? This one took me some trial and error, but alas I came out with a winning recipe.
Win or Lose
I find protein goodies to be hit or miss, win or lose. When protein cookies or bars miss the mark it makes me LOATHE all protein baked goods pretending to taste good. Massive turn off. Which is probably why I had never attempted to make my own until now.
When I began making this recipe (aka last night) I had a bad feeling that the first couple of tries would turn horribly wrong. Call it cookie intuition, I don’t know. But I’m sad to say I wasn’t wrong. Baking with protein powder is super tricky! Here’s a look at my first two (failed) attempts.
New Direction
After the fails, I realized I might be coming at this whole protein cookie thing from the wrong angle. Perhaps instead of trying to make a protein cookie, maybe making a cookie that I love and THEN amping up the protein value a bit would do the trick. And do the trick it did! I used my favorite paleo cookie recipe with some tweaks and I’m happy to share the results are award winning. Moral of the story is follow your cookie intuition.
Without Further Adieu
Here’s the recipe:
Ingredients:
1/4 cup almond flour
1 tbsp coconut flour
1 scoop vanilla protein powder
3 tbsp coconut sugar
1/4 tsp baking soda
pinch of salt
3 tbsp melted and cooled coconut oil
1 egg white room temp
1/2 tsp vanila extract
2 tbsp dairy free chocolate chips
How to prepare:
Preheat oven to 350 degrees.
Mix all dry ingredients in small bowl and whisk until combined.
Making sure the coconut oil is cooled, add egg white to coconut oil along with vanilla extract. Whisk until combined,
Add the egg white mixture to the dry ingredients and stir until moistened and combined. Then add in chocolate chips.
Separate dough into either two large round cookies or four small rounded cookies.
Place on baking sheet covered in parchment paper and flatten dough disks to desired shape. (They will not spread in oven)
For large cookies bake time is 12 minutes.
For small cookies bake time is 8 minutes.
Remove from oven then let rest on baking sheet for 5 minutes before transferring to cooling rack. (Cookies will appear undone but will continue cooking as they cool.)
You will end up with perfect beautiful cookies that look like this:
It was hard to believe that these cookies tasted just amazing as they look. I told myself I would only have one bite but I ate the whole cookie and I do NOT regret it. Perfectly sweet, light in texture but with the staying power of almond flour and protein powder, these are my new go to snacks. And don’t get me started on post workout treats! I cannot wait to devour these after a good gym sesh. Summer goals never tasted this good.

Perfect Protein Cookies
Ingredients
- 1/4 cup almond flour
- 1 tbsp coconut flour
- 1 scoop vanilla protein powder (or chocolate for double chocolate!)
- 1 tbsp coconut sugar
- 1/4 tsp baking soda
- salt pinch of
- 1 egg white room temp sub 1 tbsp almond butter for vegan version
- 3 tbsp coconut oil melted and cooled
- 1/2 tsp vanilla extract
- 2 tbsp chocolate chips dairy free
Instructions
- Whisk all dry ingredients in bowl.
- Mix cooled and melted coconut oil with egg white and vanilla extract in separate bowl.
- Add wet ingredients to dry ingredients and stir until combined.
- Fold in chocolate chips.
- Form either 2 large cookies or 4 small cookies on baking sheet with parchment paper. Flatten and shape.
- Add cookies to preheated 350 degree oven and bake 12 minutes for large cookies or 8 minutes for small cookies.
- Remove from oven and let cookies continue cookies on sheet for 5 minutes then transfer to a wire rack to finish cooling. Enjoy!
