Summer goals never tasted this good! Enjoy these picture perfect protein cookies that taste as amazing as they look. Dairy and grain free, they do not disappoint.

Ingredients
  

  • 1/4 cup almond flour
  • 1 tbsp coconut flour
  • 1 scoop vanilla protein powder (or chocolate for double chocolate!)
  • 1 tbsp coconut sugar
  • 1/4 tsp baking soda
  • salt pinch of
  • 1 egg white room temp sub 1 tbsp almond butter for vegan version
  • 3 tbsp coconut oil melted and cooled
  • 1/2 tsp vanilla extract
  • 2 tbsp chocolate chips dairy free

Instructions
 

  • Whisk all dry ingredients in bowl.
  • Mix cooled and melted coconut oil with egg white and vanilla extract in separate bowl.
  • Add wet ingredients to dry ingredients and stir until combined.
  • Fold in chocolate chips.
  • Form either 2 large cookies or 4 small cookies on baking sheet with parchment paper. Flatten and shape.
  • Add cookies to preheated 350 degree oven and bake 12 minutes for large cookies or 8 minutes for small cookies.
  • Remove from oven and let cookies continue cookies on sheet for 5 minutes then transfer to a wire rack to finish cooling. Enjoy!
