Ingredients
1/4
cup
almond flour
1
tbsp
coconut flour
1
scoop
vanilla protein powder (or chocolate for double chocolate!)
1
tbsp
coconut sugar
1/4
tsp
baking soda
salt
pinch of
1
egg white room temp
sub 1 tbsp almond butter for vegan version
3
tbsp
coconut oil
melted and cooled
1/2
tsp
vanilla extract
2
tbsp
chocolate chips

Instructions
Whisk all dry ingredients in bowl.
Mix cooled and melted coconut oil with egg white and vanilla extract in separate bowl.
Add wet ingredients to dry ingredients and stir until combined.
Fold in chocolate chips.
Form either 2 large cookies or 4 small cookies on baking sheet with parchment paper. Flatten and shape.
Add cookies to preheated 350 degree oven and bake 12 minutes for large cookies or 8 minutes for small cookies.
Remove from oven and let cookies continue cookies on sheet for 5 minutes then transfer to a wire rack to finish cooling. Enjoy!
