Today is Tuesday which means a new recipe from yours truly. I get so excited when Tuesday rolls around. If I’m being honest, when I started New Recipe Tuesday I was almost certain the inspiration to create a new recipe every week would tank… Much to my surprise I’ve become more excited with each week. And this week may bring my favorite recipe thus far: Berry Chia Pops!

We all know how hard it is to give our kids quality snacks and “treats” these days. With all of the artificial and prepackaged, brightly colored, marketed directly to children, sugar-inducing and “healthy” snacks on the shelves, it’s no wonder parent’s are scratching their brains trying to come up with something that is good for kids that actually tastes pretty good too. The struggle is oh so real, let’s just be honest.

Lucky for us (and our kids) today I bring you one of my secret weapons in the kitchen… Behold, freezer pops! I decided to use berries because not only do they yield a beautiful color, but they are simply filled with antioxidants with just the right amount of sweetness. Chia seeds provide fiber and a little boost of energy, just in time for summertime fun! The funny thing about these pops is that they sound and look so fun kids can’t help but love them. The added bonus is that we ALL love them! With only 4 simple ingredients, they just might be the one healthy treat to save us from this prepackaged world we are living in.

Let’s get to it!

You Will Need:

2 cups Frozen Berries (5 minutes thawed in bowl)

1/2 Cup Califia Farms Better Half Unsweetened Half Almond Half Coconut Milk

1 Tablespoon Chia Seeds

1 Tablespoon Honey

Popsicle Mold for 6

Can I call these instructions? Simply add all of the ingredients to the blender and blend until smooth!

Frozen Berries make it so easy to give kids healthy snacks!
This is what I use in my coffee every morning in place of heavy cream. It’s delicious and a great dairy free alternative.
Chia seeds are a tiny super food that pack a might punch of nutrition!
Not a bad view if I do say so myself.
Just a taste of honey is all this treat needs to take it to the next level.

Once everything is nice and blended, pour mixture into popsicle molds and ask a little helper to help you insert the holders.

Little hands love doing this part!

Popsicles will need approximately 4 hours of freezer time. Then they are ready to enjoy!

Berry Chia Pops

Summer never looked so good! And neither has these healthy and delicious cold treats. Just 4 simple ingredients is all this recipe takes for a creamy sweet popsicle that you can feel good about giving to your kiddos!

Ingredients
  

  • 2 cups frozen berres thawed 5 minutes in bowl
  • 1/2 cup califia farms half almond half coconut milk unsweetened
  • 1 tbsp chia seeds
  • 1 tbsp honey

Instructions
 

  • 1. Add all ingredients to blender and blend until smooth.
    2. Add mixture to molds and freeze for 4 hours then remove and enjoy!
