Happy FRYday babes. My brain feels a little fried… Not sure if it’s just me? In an attempt to make this day something to look forward to, I felt it was time to share my newest recipe… healthy brownie bites! Made with good for you ingredients like sweet potatoes, coconut oil and cacao powder, this one does not disappoint! Did I mention they are gluten free with a vegan option?

I attempted a sweet potato brownie recipe last weekend because let’s face it, brownies are always on my mind. I figured they would be amazing because sweet potatoes are great for baking AND they are already a bit sweet so that cuts down on sugar. The result was a an EXTREMELY fudgy brownie, not bad… but I felt it needed something more for that crumbly, chewy texture that I love. Here is what I came up with:

Fudgy AND chewy healthy brownie bites that melt in your mouth! Full of rich chocolate flavor and hidden benefits from sweet potatoes and cacao powder (hello vitamin A and antioxidants!). These brownie bites make you feel good without being weighed down with unnecessary refined sugars. This is the recipe you will reach for when you need a girls night or just a treat for yourself. I went ahead and double this recipe below, because the whole family is going to want them🤣.

You Will Need:

1/2 cup dark chocolate chips (or any you prefer)

1/8 cup + 2 tablespoons refined coconut oil

2 room temp eggs whisked

2 tsp vanilla extract (optional)

1/2 cup mashed sweet potatoes *see below for how to prepare*

1/2 cup cacao powder

1 1/3 cup almond flour

4 tablespoons coconut sugar

1/2 tsp salt

1 tsp baking powder

How to Make:

  1. Add chocolate chips to microwave safe bowl along with the coconut oil and microwave for 30 seconds until coconut oil is melted. Stir and let cool. (Not all of the chips will melt, but I prefer it this way!)
  2. In a separate large bowl, add flour, salt, sugar, baking powder, and cacao powder, and whisk until fully combined.
  3. Add coconut oil and chocolate mix to the large bowl as well as the mashed sweet potato and vanilla extract (if using). Stir with spoon (not a mixer) until fully combined.
  4. Prepare a mini muffin tin with coconut cooking spray and place the brownie batter in each spot. I find that a 1 inch cookie scoop works wonderfully for filling the mini muffin tin!
  5. Pop brownies into a 350 degree oven and cook for 10 to 12 minutes or until tops are no longer glossy.
  6. Remove from oven and let sit in pan 5 minutes before removing to a surface to cool and enjoy!

Cook Sweet Potatoes

Cooking sweet potatoes is super easy! Simply preheat oven to 400 degrees. Then pierce sweet potato with fork all over and place on a baking sheet and into the oven to cook for one hour. Remove from oven and let cool 15 minutes before peeling away the skin. Then mash the potatoes with a fork. Store them in the fridge in an airtight container for up to 5 days!

Alternatively you may freeze the potatoes for up to 3 months and thaw overnight as needed.

Ways to Enjoy

These are delicious on their own fresh out of the oven or for an anytime snack! They freeze beautifully which is why this is a double batch recipe. Try them with a slab of almond or peanut butter on top for that sweet and salty flavor profile! Eat what you want now and freeze some for later to be enjoyed throughout the week or longer. The healthy brownie bites can be kept fresh in the freezer for up to 3 months.

Try them warmed with some ice cream (my personal favorite way!) with some fresh berries and a drizzle of chocolate sauce..! Here is my chocolate sauce hack:

Melt your favorite chocolate chips with a teaspoon or so of coconut oil in the microwave for about 30 seconds. Then top brownies and ice cream with the sauce and watch the chocolate form a hard shell over the cold ice cream!😍

Vegan Substitions

To make this dessert free of eggs (or maybe you are just running low on eggs!) replace with 4 tablespoons of your favorite nut butter. It’s just as divine I promise 🙌.

Girls Night In

These healthy brownie bites have me dreaming of social gatherings again..! I can’t wait ti make them for my girlfriends and have them stare at me in disbelief when I tell them they are actually good for them 👌. For now I’m enjoying them for me time and also as a healthy snack option for the kiddos.
