Welcome to New Recipe Tuesday friends!! I always look forward to this special day of inspiration and recipe sharing. This week I’ve prepared a real sweet treat for you all (mom puns intended). My loving and talented mommy friend from across the globe Alice Picknett from The Mummy Business and I have decided to recipe swap this week! I love following Alice because she has the cutest kids and the funniest sense of humor. When she isn’t busy chasing two boys and a baby girl around she gets down with some serious homemaking skills like cooking up yummies in the kitchen or sewing up clothes and birthday decorations. Plus she lives in the UK and her accent kills me! I know… how very American of me, womp WOMP!
Pa Pa… Pavlova?
A few weeks ago I saw her make a gorgeous dessert called Pavlova. Pavlova is essentially a big meringue made to be cake. Not only is it easy to make because it only requires a few basic ingredients like egg whites and sugar, but it is hands-down one of the most fun desserts to make! I could go on and on about how much fun it is to beat egg whites into glossy stiff peaks but I’ll save you from the excitement haha! If you’ve never made meringue don’t be scared it’s the easiest ever. I’ve included some tips about working with meringue to ensure success every time.
Meringue Tips:
- To separate egg whites from yolk open cracked egg over your hand under a bowl letting the yolk fall into your hand. This will ensure the yolk is completely separated from egg whites. One touch of yolk will prevent egg whites from whipping up to stiff peaks.
- Be sure the bowl that the egg whites will be beaten in does not contain any water or liquid as this will also prevent egg whites from whipping up.
- A stand mixer is ideal, but NOT necessary. I used a handheld mixer for the first four years of marriage and it worked great!! Don’t let the fear of not having the right tools hold you back.
- When pouring in sugar over egg whites be sure to do so with a delicate hand! Pour in about 1 tablespoon at a time as to not “deflate” the whipped egg whites.
- Have fun! If a mistake is made, the only two main ingredients are egg whites and sugar. Have backup ingredients just in case!
Simple and Elegant
It’s no surprise by now that my favorite recipes are those that are impressive but secretly a breeze to make. This recipe is one of them! It’s a show stopper with it’s beauty and simple elegance. I gathered some fresh summer fruits like juicy peaches, raspberries, and blueberries then topped with fresh whipped cream and roasted almonds. Dairy free friends, this would be amazing with some coconut whip!!
Since I read Pavlova is best to sit in the oven at night when it cools, this recipe was made the night before… and unfortunately that means I don’t have any pretty pictures to share of the actual meringue-making process. But I had some time alone to dress this baby up and it was so relaxing and fun.
