Hello friends! This post includes my latest recipe from my IGTV..! It was so much fun creating this recipe in video form, which is a new for me. Below is the full recipe for these simple and festive Pumpkin Spice Pop Tarts. Enjoy!
You Will Need:
2 prepared pie crusts (the prepared ones work amazingly well and include two crusts!)
1/2 cup canned pumpkin
1 tbsp
1/4 cup maple syrup
1 tsp orange zest
1/2 tsp salt
1 1/2 tbsp tapioca or corn starch
1 icing recipe (doubled if you prefer thick frosting)
Icing Recipe:
1/2 cup powdered sugar
1/4 cup maple syrup
1 tsp or so cinnamon
1 tsp water or milk
Step 1:
On floured surface, roll out dough and using a floured rolling pin, work into a sizable crust to cut into rectangles.
Step 2:
Prepare filling by mixing pumpkin, pumpkin pie spice, maple, salt, and tapioca or corn starch into small bowl. Mix until Smooth.
Step 3:
Cut pie dough into 10 equal rectangles or so… you can measure if you want perfection. I did not measure 😉 Then add filling to 5 of the rectangles. Using remaining of pie crust, roll out remaining dough to create about three more pop tarts from this disk of dough. (The whole process gets repeated if using both pie crusts)
Step 4:
Crimp to seal edges and place pop tarts on a silicone or parchment paper lined baking sheet. Pop into 350 degree oven for 17 minutes or until edges begin to slightly brown.
Make the Icing
Whisk icing ingredients in bowl. When pop tarts are finished baking, let them continue baking for 5 minutes out of the oven by leaving them on the sheet. Then prepare a wire rack over parchment paper or silicone baking mat for icing.
Drizzle and Sprinkle
When pop tarts have had a chance to cool 10 minutes, place them on the wire rack and drizzles icing over. Then wait a minute to drizzle a second coat. A third layer can be drizzled for an extra thick frosting, just like the ones from your childhood 😉 Add sprinkles and enjoy immediately!
To save for later (this is REALLY HARD!!) be sure icing is set then place in sealed tupperware for up to two days. How fun is this for a fun play date or Halloween party? My kids are loving these and so am I!! Thanks for stopping in and can’t wait to hear how you are enjoying this one <3

I saw a recipe like this but it had homemade crust. I LOVE your recipe, but I do prefer to make my crust….do you have a go to recipe for homade crust?
