Healthy Banana Bread Muffins

Mom's Banana Muffins are made new with healthy good for you ingredients like whole wheat, honey, and coconut oil. These delicious muffins are perfect for lunchboxes and tea parties and are just as fun to make as they are to eat! Double the batch and freeze for healthy snacking throughout the week.

- 3 bananas ripe, mashed
- 1/4 cup refined coconut oil melted and cooled
- 1/4 cup almond or coconut milk
- 1 egg whisked
- 1/2 cup honey or 1/4 cup based on preferences
- 1 cup whole wheat flour
- 1 cup unbleached all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- mix-ins of choice optional
- coconut oil spray if not using liners
Preheat oven to 350 degrees and line muffin tin with 12 liners or spray tin with coconut oil.
In large bowl, mash bananas then add milk, coconut oil, vanilla, and whisked egg.
In separate bowl add dry ingredients minus the optional mix ins and whisk until combined.
Making a well in the center of the dry ingredients, pour wet ingredients into dry ingredients then mix until moistened. Do not over mix.
Gently fold in mix-ins if using and pour batter into muffin tins filling 2/3 of the way full.
Bake in oven for 20 to 22 minutes.
Once done baking, remove from oven and let sit in pan for 5 minutes before transferring to rack or plate to cool. Wait at least 10 minutes before eating and make sure to cut in half to cool for little ones. Keep fresh in an airtight container. Enjoy now or freeze for later!
