Easy Hidden Veggie Pasta Sauce

This winning combination of antioxidant-rich tomatoes and carrots are sure to please even the pickiest of eaters. Little ones will never know the veggies are hiding inside! Skip the added sugar and preservatives from traditional store bought pasta sauce and try this one if you're in a pinch or looking to meal prep something delicious for later in the week. No chopping veggies or prep required!

- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1 box fresh tomatoes, no salt or sugar added 26 oz
- 2 tbsp tomato paste
- 1 1/2 cup peeled baby carrots
- 1 1/2 cup Italian Seasoning
- 2 bay leaves
- 1 tbsp coconut sugar or honey
- 1-2 tbsp water
- 1 tsp baking soda
- salt and pepper to taste
1. Heat olive oil in pan with garlic and carrots. Saute until fragrant being careful not to burn garlic.2. Add tomatoes, tomato paste, seasoning, and bay leaves. Bring to a simmer, cover and reduce to low. Simmer for 25 minutes.3. Using a slotted spoon, scoop out carrots and place in blender with water. Blend until completely smooth.4. Add carrot puree back to sauce, add coconut sugar or honey and baking soda, season with salt and pepper, and discard bay leaves. Stir and serve over noodles or roasted vegetables.
