Hello from our home friends! The kids have had a few days off this week and it feels like old times (pre school schedules and all). I truly loooove having them home with me and getting into new fun activities. With St. Patrick’s Day just a few days away, I knew I wanted to create a fun treat to make together so today I’m sharing how we made these healthy St. Patty’s Day treats… Vegan Rainbow Fruit Cups!

Holiday Treats

I knew I wanted to make these healthy because a lot of the “treats” I see are sugar loaded. Don’t get me wrong we love candy as much as the next person, but I like to give my kids healthy options first (if I can). They will get their fill of chocolate coins and lucky charms cereal come March 17th… I am not anti-sugar, just a “healthier option promoter” first… does that even make sense to anyone??!!

Another great thing about this easy and healthy treat is that it is perfect for parties, play dates, family get togethers, and our friends with allergies and special diets! Gluten free friends may enjoy the crust by subbing gluten free graham crackers or pretzels and friends who are not eating food dyes may omit the Lucky Charms marshmallow topping.

Two Ways to Entertain

Simply make the cups ahead of time and store in fridge (I recommend topping with cream and sprinkles just before serving!) OR let guests and littles build their own cups like I did with mine. I personally think it’s fun to let the kids have a part in making their own treats! If that seems overwhelming, you could even make the base of the cups (crust and fruit layers) then let friends add their toppings. The options are pretty endless here 😉.

You Will Need:

8 graham cracker stacks (rectangles) OR 2 cups pretzels (for a saltier base + add 1/8 sugar or coconut sugar to balance flavors)*

1/2 cup Vegan Butter melted (I like Miyokos brand)

1 cup each fruits of the rainbow, sliced

Coconut Whipped Cream or homemade; we used this recipe.

Lucky Charms cereal marshmallows topping, or other topping of choice

8 plastic cups or small glass jars

*For gluten free friends, you can find GF pretzels and Graham crackers in place of regular ones.

How to Make

  1. Crush graham crackers or pretzels in a bag or food processor until it resembles a course flour texture. Add to a bowl with melted butter (and sugar if using pretzels) and stir until crumbs are coated. Fill bottom of the cups approx 1/2 inch deep and press down semi-firmly.
  2. Take sliced fruit and layer in cups backwards from the rainbow order (purple, blue, green, yellow, orange, red).
  3. Take whipped cream and top along with the lucky charms marshmallows or preferred topping. Enjoy!

Making Memories

When I asked the kids yesterday what their favorite part of their day was they both told me it was making our special rainbow fruit cups together 😍. I loved hearing them chat about their favorite fruits and how we are REALLY going to catch a leprechaun this year! It never ceases to amaze me how these simple little projects leave lasting memories in both of our hearts… and that’s exactly what I am wishing you this year 💕.
